Whole Wheat Applesauce Waffles

“Waffles are just pancakes with abs.”

This is my favourite fluffy but dense with better-for-you ingredients waffle recipe!

In a medium-sized bowl, whisk together:

  • 2 flax eggs
  • 6 tbsp. applesauce
  • 1 3/4 c. oat milk
  • 2 tbsp. coconut sugar
  • 1 tsp. pure vanilla extract

Add:

  • 2 c. whole wheat flour
  • 3 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/4 tsp. Himalayan salt

Whisk to combine.

Cook in waffle iron.

Makes 7-8 waffles.

Add your favourite toppings and enjoy! My favourite way to eat them is with hubby’s fresh made fruit compote and coconut whipped cream. They are also delicious with peaches (fresh or frozen) and maple syrup!

Note: to make a flax egg, combine 1 tbsp. ground flaxseed + 2.5 tbsp. water, let rest 5 minutes before mixing into batter.
