Cranberry Coconog Shake

Serves 2.
Prep time: 5 minutes.

It’s the most wonderful time of the year!

Plant-based eggnog takes my love of smoothies to even higher levels. And to pair with it, cranberries have stolen my heart! I also love adding frozen cauli rice for a little (tasteless) cruciferous veggie power. It levels up the creamy texture along with bonus fiber.

I’ve sampled a lot of the dairy-free eggnog alternatives over the last couple years, but So Delicious coconut-based nog tops the list for flavour and balanced sweetness.

Simply swap out the cranberries for fresh or frozen spinach and sell more veggie power to your kids by calling it a “Grinch” shake!

Ingredients:

  • 1/2 cup frozen riced cauliflower
  • 1/2 cup frozen cranberries
  • 1 frozen banana
  • 1 cup So Delicious coconut nog
  • 2 ice cubes

Directions:

  1. Place everything in a high-speed blender and mix until smooth.

*Note: this shake is very decadent, but the sweet eggnog helps counter the tart cranberries. If you find it too sweet, simply swap 1/2 cup of nog with any other unsweetened plant milk.

If you can’t find frozen cranberries, buy several packs of fresh, wash and drop them in an air tight bag to freeze.
